Virtual Coffee

Good morning friend!

Thanks for stopping by for (virtual) coffee/tea/hot beverage of your choice.

It's been a long, long week since we talked last. With the historic blizzard we had last week my university had three snow days, also historic. The students loved it! I was not impressed.

When you're no longer in school, school days aren't nearly as fun as they used to be.

Instead of being able to sleep in three days in a row, I was trying to keep 400 college students from climbing the walls.

Here's a peak at what our snow days looked like (since we're meeting for coffee, this is where I would pull out a little photo album from my purse so I could brag about my "kids").

We made valentine's for a local nursing home.


We shoveled again and again and again.

I figured out how to use the backpack vacuum. Three days without our amazing custodial staff and we all needed to pitch in to keep things clean and tidy.


We sang songs about how school was cancelled.


And, of course, we played in the snow, 'cause there was a lot of it!


What did you do on your snow day? Did you have snow? Did it even snow where you are? No, don't answer those questions. I don't want to know.

On a note unrelated to snow but related to coffee, I'm pretty sure that I'm lactose intolerant (when Kyle was little he thought it was like toast intolerant...cute).

I cut out dairy to see if that helps my tummy trouble. And I have discovered soy chai tea. Way better than the original.

Oh gosh, listen to me. I'm doing all the talking. I want to hear about you!

  1. I recently became lactose intolerant, too. It's been so hard! Because I'm diabetic my diet can be narrow anyway, and I relied heavily on (carb-free) dairy. I miss it so much!

    We've been getting hammered by snow, too. Spring anyone? Seriously.

    Also, I really loved the orange earrings you recently posted on twitter. Lovely!

  2. I really like almond breeze milk in my coffee. Yum. Sounds like your snow days were a lot more adventurous than mine. I stayed home. In fact, I didn't leave the house for 3 days.

  3. i wish our school had snow days, well we had one 'snow day' but it was due to rain which in manitoba is not a good thing in Feb. we are still sliding around everywhere.
    i've been lactose intolerant for many years now and soy and almond milks are much better, all hot beverages made with soy are just so yummy!

    & in regards to snow..ah, the grass is always greener! i'm sure you guys would love some cali sunshine while I wouldn't mind playing in the snow!

  8. my husband is lactose intolerant and sometimes we buy dark chocolate almond milk. it is just to die for. it's like the perfect chocolate fix.

    all those snow pictures are making my toes cold. when will it be may?!

  9. your snow is so pretty!! i love the shot of the bike rack! i guess you can probably tell there is no snow here (FL)... i wouldn't mind a few flurries... but these snowstorms are crazy!

    We have not gotten snow this week, its been dreadfully rainy though. Luckily we had a bit of sunshine yesterday! Though i've heard rumors of snow on thursday and that stinks! I don't want snow! i'm ready for summer!

  12. Unfortunately, I can relate with your lactose intolerance issued...But, I totally love me a soy chai tea too! My favorite comes from Panera--do they have those near you?!?

    Also, my allergist said that before I gave up on dairy altogether I should try the probiotic Align. It has really helped me, but not taken away all of my issues. As long as I don't overdue it, however, I can have some dairy.
