Roasted Asparagus

It's starting to feel like spring (finally)!

Smell of freshly mown lawns. 
Sounds of birds chirping.
And the taste of fresh veggies!


Roasted asparagus (from simply recipes)

Ingredients
1 lb asparagus
olive oil
salt
pepper
(garlic and lemon juice... I don't use these)

Clean asparagus by snapping off the ends. 

Lay asparagus in shallow baking dish (we used a cookie sheet) and coat with olive oil, salt, and pepper. Coat evenly.

Roast for 10 minutes (or until they start to brown) at 400 degrees.

(Lemon juice goes over after you pull them out of the oven.

Now I can't wait for the farmer's market!

  2. Yeah for Spring! During Spring & Summer I think we bbq veggies almost every night. Asparagus is one of my favorites!
